KC Pappas started First Knight in 1985 in the beautiful city of Calgary,Alberta, Canada and has carried on a standard of excellence throughout the years. KC and her daughter Stephani along with their exquisitly bred horses have beeen fiercly competitive in the show ring for the past 30 years. This small horse farm which averages about 25 head of horses realized a life long goal in 2016 when it relocated to the small town of Spurger,Texas. Stephani and her husband Dominique Jones manage the new ranch under the expert guidence of KC and continue the tradition of perfection.

KC's love of horses has been a life long affair, as a child and teen she competed in hunter jumper competitions. Her husband Greg Pappas owned numerous extremely successful standard bred race horses, and it was at one of these sales that KC saw and instantly loved miniature horses. First Knight Miniatures is the result of her desire to make her ideal miniature horse a reality. Her dedication to excellence and quality has produced one of the most consistent and spectacular breeding programs in history. AMHA recognized this great feat and awarded her the "Life Time Achievement" award in 2010.
